Craving popcorn or would you rather have a cupcake? No need to choose -- just have both.
Movie nights call for comforting snacks and while classic popcorn is always a do, sometimes you crave a little extra something. Emma Chapman, the blogger and recipe developer of A Beautiful Mess, has found a way to create a delicious union fit for any night of the week.
You don’t even need to use up your popcorn stash to make it happen.
“(My husband) Trey challenged me to find a way to incorporate buttered popcorn Jelly Bellies into a cupcake recipe,” explains Chapman. “Sounds sort of weird, right? I wanted to create a cupcake that did indeed showcase that buttered popcorn flavor, but without being overwhelming or unappealing. Too much and it can get kind of gross. And cupcakes should never be gross.”
“I’m happy to report these are mostly sweet and delicious with just a little nod to that salty, buttery goodness we love about popcorn,” adds Chapman. “So, don’t be scared. You’re gonna love these.”
How can a simple tiny candy create an explosion of rich, oozing flavor? Simple, each jelly bean slowly bakes inside the cupcakes. Once your dessert is done in the oven, silky smooth Swiss meringue buttercream, which also happens to have loads of the golden stuff, tops each cupcake.
