Apple Bacon Chicken Salad for One
- 1/2 cup cooked chicken, chopped
- 1/4 cup chopped Gala apple
- 1/2 stalk celery, finely chopped
- 1 tablespoon red onion, finely chopped
- 1 slice center-cut bacon, cooked and crumbled
- 1 tablespoon low-fat Greek yogurt (plain)
- 1 tablespoon low-fat mayonnaise (can be substituted with another tablespoon of yogurt)
- 1 teaspoon chopped pecans (optional)
- 2 teaspoons chopped almonds (optional)
- Salt, pepper and stevia to taste
- Lettuce leaves or low-carb wraps, for serving (optional)
- In a small bowl, combine chicken, apple, celery, onion and bacon. Add pecans or almonds, if using.
- Stir in yogurt and mayonnaise. Sprinkle in salt, pepper and stevia to taste.
- Serve as is, or on a lettuce wrap or wrap of choice.
